La Margarita Express was started in 1991 by Pedro Rosales, as an off shoot of La Margarita Co. restaurant in the Salem Centre Mall. It started as a fast food version of our food and was run by Javier and Xochi Muñoz ( son in law and daughter of Pedro). It stayed in the mall location until 1994 when it moved to its current location on Chemeketa street. There Pedro’s son, David, took over as manager for a few years. In 2000 Javier and Xochitl bought the restaurant from Pedro and changed the format of the restaurant from “fast food” type Mexican to more of a sit down type of restaurant. Javier’s sister Maria, joined as an assistant manager. They ran the restaurant together until 2007 when Javier and Xochitl left to assist Pedro back at La Margarita in preparation for his retirement and Yanira Muñoz (Javier’s sister) and Rolando Herrera (brother in law) came to the Express as partners and to take over the day to day activity of running the business. In 2008 they added Salvadoran food to the menu and the restaurant has continued to grow and expand in its 27 years of business.
